Rogan Josh- the delicious lamb dish is originally derived
from Persia. This signature Kashmir style cuisine derives the name from Persian
words – Rogan meaning “oil” while Josh meaning “intense heat”. Hence, it means
a dish prepared in oil with intense heat.
So here we bring you the original recipe of Mutton Rogan
Josh- Kashmir style. This dish is absolutely irresistible and truly delectable.
Pieces of meat- 1 kg
Garlic- 1 tbsp
Water- 5 cups
Pure ghee- 1 cup
Salt- 2 ¼ tsp
Green cardamoms – 8
Fried onion paste- 2 tbsp
Turmeric powder- 5 tsp
Red chili powder
(Kashmiri)- 4 tsp
Black pepper powder- ¼ tsp
Saffron- ½ tsp
Dry cockscomb flowers- 1
Method for the
preparation of Kashmiri Mutton Rogan Josh
Boil the lamb meat in
water, removing scum with the help of a ladle unless there is clear water.
Add garlic and salt.
Continue boiling unless the lamb meat is partially cooked.
Then remove the meat pieces
from the heat. Wash the lamb pieces in a cold water pan. After that keep aside
Strain water with the help
of a fine sieve. Collect the water in which the meat is boiled in a separate
Get this pan back to heat
and bring it to boil. Add the lamb pieces.
Meanwhile, take a pan on
heat and add ghee to it. Add cloves and toss them till they begin to crackle.
Then remove and sprinkle a
pinch of water. Cover with a lid.
Add turmeric powder, onion
paste, green cardamoms and ghee with clove flavor to this boiling water. Keep
boiling for around ten minutes.
Blend it with red chili. Then
low the flame and cook till the meat becomes tender.
