Ingredients

·        
Pieces of meat- 1 kg

·        
Garlic- 1 tbsp

·        
Water- 5 cups

·        
Pure ghee- 1 cup

·        
Salt- 2 ¼ tsp

·        
Green cardamoms – 8

·        
Cloves- 4

·        
Fried onion paste- 2 tbsp

·        
Turmeric powder- 5 tsp

·        
Red chili powder
(Kashmiri)- 4 tsp

·        
Black pepper powder- ¼ tsp

·        
Saffron- ½ tsp

·        
Dry cockscomb flowers- 1
cup

Method for the
preparation of Kashmiri Mutton Rogan Josh

Ø 
Boil the lamb meat in
water, removing scum with the help of a ladle unless there is clear water.

Ø 
Add garlic and salt.
Continue boiling unless the lamb meat is partially cooked.

Ø 
Then remove the meat pieces
from the heat. Wash the lamb pieces in a cold water pan. After that keep aside
the meat.

Ø 
Strain water with the help
of a fine sieve. Collect the water in which the meat is boiled in a separate
pan.

Ø 
Get this pan back to heat
and bring it to boil. Add the lamb pieces.

Ø 
Meanwhile, take a pan on
heat and add ghee to it. Add cloves and toss them till they begin to crackle.

Ø 
Then remove and sprinkle a
pinch of water. Cover with a lid.

Ø 
Add turmeric powder, onion
paste, green cardamoms and ghee with clove flavor to this boiling water. Keep
boiling for around ten minutes.

Ø 
Blend it with red chili. Then
low the flame and cook till the meat becomes tender.

Ø 
Add saffron, black pepper
powder and the extract of cockscomb flowers. Stir continuously bringing to a
boil.

The dish is ready to go. Serve in a pretty bowl with boiled
rice and relish on this scrummy lamb dish.
